We cook our BB ribs the same way every time and they come out so delicious. The only variations I make are to the rubs or the pre rub glaze. They go on a 250-350 LGE for 2 hours bone down, then flip for 2 hours bone up, then a final 1 hour wrapped. For this particular cook, I pre rubbed with a honey, molasses and horseradish mustard mix, 1/2 c, 1/3c, and 2 tbsp. Then I used a basic BBQ rub, found in the BGE cookbook. I prefer fall off the bone ribs, but hey, to each his own! As long as you enjoy your food with friends and family. What else is better? I'll post more pics as they cook.

Thinking 300 would still be too hot for a 5 hour cook. I go 225 and they are done in 5 hours but I do 2 hours wrapped1 XXL BGE, 1 LG BGE, 2 MED. BGE, 1 MINI BGE, 1 Peoria custom cooker Meat Monster.Clinton, Iowa

They cook indirect heat, over a bath of apple juice and water in a full half pan. Before rubbing I soaked them in an apple juice and apple cidar vinegar mix for 2 hours.

Ok, the final, cut, ready to eat, product. So tender, juicy and flavorful.. Smoked with a small chunk of mesquite and one larger one of apple.
