I'm kinda stuck in the indirect mode since I had a WSM for 8 or 9 years. I need to get confidence using direct heat. The only things I ever done direct was on a gasser and it was like steaks, kabobs, BS chicken breasts etc. Just got the Egg at the end of April.Dearborn MI
