Temp tip from Fred

My husband and I made the biannual trek to Fred's for his blue-bag "Restaurant Charcoal." He was holding a demonstration on how to cook pizza on an egg and offering some general egg tips (more than 25 folks were there). He had a terrific tip for getting your temp down if it has truly run away on you: Dump a quarter bag of charcoal on top of the coals. He said the new charcoal will almost snuff out the fire, and you can basically start over. I let this happen only once, as a newbie, but I can see how it could happen if you get distracted in the kitchen.

That's a good tip to remember. I have a 19 month that likes to hang out with daddy and sometimes on occasion I have missed my window to adjust the vents and the egg temp takes off. I will be sure to have a little extra lump handy for such an occasion. Thanks for the tip

You can try this too. Once you get the hang of where the vents need to be for a given temp, light the lump, leave the dome open for a few minutes to get it going, close dome and adjust the vents to where you think they should be. It will take a bit longer to get up to temp, but you won't be too far off even if you get sidetracked.KSwoll said:That's a good tip to remember. Waited a while longer to make sure it was stable. Never budged! Does it always work that well? Of course not, but it's never too far off.I hate it when I go to the kitchen for food and all I find are ingredients!
