I have 2 Deer Roast how should I cook on the Egg?

A good friend gave me 2 deer roast last night and would like me to cook on the Egg and I have never cook anything Deer other than ground Deer burgers. So I asking for advice and recipes, Thank in advance for any help. Jupiter Jim

Deer is so lean, it tends to be very dry. Always a little nervous cooking wild game to anything but well done. I'd rec grind it into sausage or burgers with some bacon.

I've always larded deer roasts, prefer sausage, stew or burgers truthfully.

Very lean, start out on grate with or without smoke for a sear and then finish in a pan covered with foil to braise.Dearborn MI

Cook L & S to 115*-120* int? Then sear all sides. Wild meat is best rare/med rare or else it tends to dry out because it's so lean.GWN

I like mine pretty rare too but that looks like it is still able to walk in the woods LOL. I started cooking mine more well done in a braise with the diseases in our deer herd herein Michigan.Dearborn MI

I believe meat from wild game is a lot safer to cook to rare than domestic livestock that are fed god knows what, bumper to bumper in a feedlot.....IMHOGWN

I agree but with Lymes, CWD, and the new one I can't pronounce or spell they still don't recommend it swimming in blood LOL........I mostly make homemade sausage, Kielbasa, and jerky anymore anyway since I'm the only one in the house who eats it. If I cook a roast or something it just gets overcooked on the re heat anyway.Dearborn MI

A lot depends on the species, but a same species comparison between wild and farm raised, the latter where the feed and living conditions are controlled, shows the wild meat statistically has a much, much higher risk of food borne illness.
Wild meats like venison and those from other strict vegetarians game is much more inherently safe than omnivore wild game.

Addendum - the topic is venison - that's considered low-risk to cook rare, especially if it's been frozen long enough (and properly). Not trying to scare anyone from eating it the way it tastes best.

If it's good you can come to my house and get all the deer you want. I have 3-10 of them suckers in my yard on any given night and early morning. They come within 10 feet of the house and eat anything that grows and drive the dogs crazy. Wouldn't mind if they stayed in the field, but hate em so close to the house.Steven
