    The first picture is of our 1st spatchcock chickens cooked indirect with a drip pan and no smoke. The second picture is of our spatchcock chickens cooked tonight, direct at 375 for 1 hour and 5 minutes. They are resting as I type; however, the appearance is definitely much better than the first cook.

    Just finished dinner and I must say that the second cook was definitely the better one. Cooking them direct with some added wood chips for a little smoked flavor was awesome. Cooking direct to me also produced a better tasting and looking finished product.
