This is my first time doing short ribs like this. Just rub and Oak with cherry @250. Took 7 hours until my Thermapen went through like butter. Basically, like brisket. Normally I braise so we will see...

I find that they need about 7 hrs at 280.Be careful, man! I've got a beverage here.

Looking good man! This won't be the last time you do them.
Next time, try to find plate short ribs. The fat is much more consistent across the cut.Just a hack that makes some $hitty BBQ.... -

Generally only find the packaged single short ribs, but once you go down this road you will never look back. Makes any pork rib a second cousin. Great looking cook. And the prior is an opinion...Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.
