Bacon (Pig Candy), Bourbon, Chocolate Chip Cookie

I'm cooking in a small (15 cooks) Eggfest next month, and was asked to do desserts.  Looking for something different, and I found a recipe for Bacon Bourbon Chocolate Chip cookies, and decided to play with it a bit.  Can't go wrong with Bacon, Bourbon and Chocolate mixed together in a cookie. Instead of just bacon, I made Pig Candy.  Baked the cookie in a CI pan, so I made one big cookie.  I cut back on the bacon (it called for 3/4 pound - I used about half that) but next time I'll go for it with all the bacon.  I was afraid it would be overpowering, especially with the bacon grease mixed into the dough, but it was fine.  I think I have a winner.

As of the other day, they were still looking for someone to cook on a Medium.

Hit me up! I miss cooking on that red-headed stepchild. I might do some tri tip or tenderloin if they need a meat dish but I'm up for whatever.
