OT: Knife sharpening setup

I know several of you are as anal as my husband about knife sharpening, so I thought I would share his setup.

He countersunk three quarter-inch magnets in a piece of heavy plastic and then added a bolt. The magnets hold the knife, and the bolt he sets to the right angle and uses it as a guide, being careful not to scrape the stone. He sharpens all the knives at 15 degrees. (I'm very fortunate. If I know I will be cooking at someone else's home, I often bring my own knives. Can't use a dull knife.)

Can't sharpen for crap. I give the pro knife maker down the street a fifth and he will do all my knives.

Not to take anything away from your husbands fine knife sharpening skills, but here's what I use to keep my Asian style blades razor sharp. Got it from Amazon. BTW it was the top rated home sharpener in Cook's Illustrated. It is so simple to use!

I want to get more into Sharpening but I have a local place that does it to custom bevels for 2 bucks per 5 inches. I can't beat that no matter what.

@RRP‌ I'm going to follow your lead once again. Thanks for sharing. I was just looking for a sharpener realizing how bad I needed one while trimming my last brisket. Thanks you FIB :)

LOL - Note that model is for the Asian style meaning a smaller degree angle of 15. They do make them for other angles so you want to check so you don't ruin your knifes.

Anybody have advise on how I find the right sharpener for my Global knives?

The DudeThis is a very complicated case, Maude. You know, a lotta ins, lotta outs, lotta what-have-you's. And, uh, lotta strands to keep in my head, man. Lotta strands in old Duder's head. Luckily I'm adhering to a pretty strict, uh, drug regimen to keep my mind, you know, limber.
