Short Ribs - Lesson #1

Got some short ribs with our recent beef order and decided today was the day to trying cooking them. Read mulltiple recipes and since I was short on time I tried a grilling recipe instead of low and slow. Cooked them 425-450 dome for about an hour. Got 160 internal temp and pulled them, let them rest for about 10 minutes, and dove in. Good flavour but way to chewy. Guess next time will allocate more time and low and slow them for 3-5 hours as the "other" recipes said. Let things break down and tenderize more. Lesson #1 on beef ribs filed for future reference.........carry on:)

Oh yes...I cook my short ribs like I do my brisket. Usually take about 5-7 hours to get to temp.Just a hack that makes some $hitty BBQ....
