Memorial Day Brisket. Least of us never forget what has been sacrificed for our freedom....

I am cooking a 12lbs brisket, slathered in spicy stone ground mustard, and dusted with Rudy's Brisket Rub.  Cooking indirect at 230-250 with a mix of oak chunk coal, pecan and apple wood chips and chunks mixed throughout, until it is about 180F.  Put on at 3:00pm expecting to be complete about 9:00am ish.  Cooking early so maximum beach time can be achieved.

    I started about 3:00pm yesterday, and pulled it about 9:30, temp dropped in egg early this morning and this delayed the cook about an hour.  If you plan on 1.5hrs per pound, and start checking temps about two hours before expected finish time.
