72hr Short Ribs SV style

Well, after 28 hours of marination, my ribs are now sealed and hot tubbin. I won't get 72hrs but it will be close to 52. I still expect beefy goodness. Pics later.

    What temp are you going for?  That will make a difference how much collagen you break down.

    I did short ribs at 133F/72H, it was tender medium rare pink like prime rib.  Next time I'm shooting for 144F/72H to get more rib-like texture.  Looking forward to your temp and pics.

    Verdict: After hot tubbin for 52 hours, these were the most tender and flavorful beef ribs I've ever done. All the collagen broke down so they were just tender - not chewy at all. Meat candy. I seared at about 500 for 1 minute per side. Served up with some sautéed Broccoli Rabe with a Hoisin glaze and a Cucumber and Red Onion salad.
