Need ideas for memorial day Cook

I need some ideas for Monday.  We are now expecting 10 adults and ~10 kids.  Kids are a mixed bunch where I can cook them hotdogs or something.

I need some ideas on what to make for the adults.  May make some apps like ABT's/Pigshots but that would require precooking cooking something for the main meal.

I dont have time for an overnight or very long cook.  People are coming around 1 and we would like to eat around 4 maybe?

I only have a large BGE. 

Maybe ribs but dont think I have enough real estate to be able to cook enough for 10 adults.

    The Egg can cook pretty much like an oven for something like pork loin. Rule of thumb is 15min/lb at 350. You could get a loin, and cut it into 2 lb chunks, perhaps brine over night, and each piece will cook in maybe 1/2 hour. Then slice for serving.

    What I'm going to do tomorrow is a repeat of what one of the things I made at Christmas. I'm going to take a bunch of turkey wings, separate them into sections and marinade over nite. Then toss them into a slow cooker w. some seasoning and almost no water. After a few hours on low, followed by a period at "keep warm" they went into the Egg for about 20 minutes direct, with flipping to brown. The biggest section turned out like a mini-leg. I thought the middle section w. 2 bones was better, a little crisper, and a little fattier. The tips crisped up very nicely. Not much food value, but great for the crunch and flavor.

    For Christmas, serving w. other things, I didn't sauce, but will tomorrow.

    I'm cooking for a similar crowd.  There's always burgers.  I've never done burger on my egg so I'm excited!

    You've got around 3 hrs of cook time. Turbo ribs or apps and then burgers/brats.

    By turbo ribs. Do you mean cook for an hour or so and foil for another? Or hot and fast at what temp and how long?

    And I don't have a rib rack How many racks of baby backs would I need? How can I cook them in shifts and still have the ones cooked and let sit in the fridge taste like fresh cooked ribs?

    I guess 4 racks at a time. I dont think 4 racks will be enough.

    Do some vertical chickens and ABT's for the apps. Chickens should take about 1 1/2 - 1 3/4 hrs at 400 indirect and throw the ABT's on the grid around the chickens.

    What can be cooked ahead of time and served later besides pulled pork or brisket? Thought about some chicken breasts as well but I don't like chicken. Pig shots are requested but they take up allot of room so that will be the app - just need to decide on the main course.

    Pepper stout beef.   You could smoke it a few hours and then finish it in the oven once foiled.  Maybe after the apps come off put it back on the egg uncovered a little while. 


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    If you really want to go all out, i would suggest a nice sucking pig if you can get one. I have never attempted to make one on the egg, but you can make a simple pit and blocks for cheap.

    I would look at these options-

    1) a whole pork loin (not the mini tenderloin but the whole large diameter 3" to 4" roast).  Marinate in whatever you like all day sat, and either cut it grill side for chops or roast the thing whole and cut off for sandwiches.  Mighty tasty items there.

    2) Chicken wings/breasts/thighs.  marinate in whatever you like and cook over direct heat- you'll do two batches.  One thing that's a great overnite marinade is buttermilk.  whole chix are good too but you need a multi grid system to make at least five birds- that's one breast side per adult

    3) Make a whole turkey.  if you can get one thawed in time- most are frozen.  but a turkey on the BGE with sides like corn, potato salad, etc is always a hit.  I've been asked to do one for a July 4 party this year by the same folks I took a thanksgiving turkey to last year and that one was a major hit.

    4) Brats with kraut & Italian Sausages with roasted red/green/orange/yellow peppers

     

    You can't go wrong with any of these on the BGE.

    I am going to fit 6 racks on my LBGE this weekend.  I don't know if I can do it but I saw a picture where somebody threw 5 on.  So what's 1 more?   If you didnt know, a rib rack is just an upside down roasting rack.  (I'm sure they make a special one, but that works fine for most of us)

    I would suggest this...cook something fun, tasty, that you don't have to stress about.  It's memorial day and you'll want to be outside with your guests and not worrying about the cook all day.  So...whether you do ribs or whatever...cook it up, and then when you have it foiled in a cooler the grill is free for the links.  Throw as much hot dog, sausage, brats, whatever on there to fill the gap.  People will love the mixed grill options.  The main course will get the accolades it deserves and the easy stuff will keep them full!

    I'm having a backyard party where I want to be out playing cornhole and bocci so I'm going to do hot dogs on the gas grill so people can eat those whenever (no sit down meal) while I cook the ribs.  Then, when the ribs come off I'm going to throw on a mess of chicken wings...you know, for desert.  Those will be slow cooked as well so I figure an hour or two after the ribs are served a big pile of wings will show up.  Gluttony.  That's how you celebrate an American holiday!    :)

    Whatever you do will be awesome.

    Sounds great. Off to the store later to find ribs and whatever I can find.

    Chocolate chip cookie in the cast iron will be a desert as well.

    We'll here's the menu..... Various dips like buffalo chicken dip, salsa Apps: Pig shots Asian pork meatballs on skewers(APL) Main: Brats in beer bath (APL) Burnt ends ( from a previous brisket cook that we froze leftovers) Pork tenderloin (had one frozen in the fridge) BBQ baked beans BBQ macaroni and cheese Desert: BBQ cast iron chocolate chip cookie with ice cream and what ever the guests bring. Will make the beans and macaroni today and reheat tomorrow

    I have become a big fan of Moink balls for an app.  I do them with Rosina's mini meatballs (freezer section), and about 1/4 strip of normal bacon.  At 350 they only take about 30 minutes and they are way faster to make up than pig shots or ABT's.  You can fit a ton of them on the grill, and you should be able to get your family to do the prep!
