Beef Short Ribs

Happy Sunday fellas.
I Pick up a 4lb slab of beef ribs yesterday. I trimmed the fat cap off the meat side of the ribs. I did nothing to the bone side as the meat are on top. Rubbed them down with Cow Lick last night and put them in the fridge. I threw the rack on the pit this morning/afternoon while i cut the grass. I have the egg set up at 250-275 dome. I hope these come out as good as the brisket i did last w/e. I'll keep you posted w/ pics. I am using hickory and cherry for smoke. Smells great out back.

These were done at just about 5 hrs. I took them out of the foil to set the bark. Man, these are good. I love this egg. I have been looking at reverse flow smokers (just browsing, kickin cans) but this egg ceases to amaze me. After a year, I am as excited to cook as the day I bought it. @Ladeback69 - trying different cooks keeps egging exciting. I get tired of the regular ole ribs and pork butt low and slows. I'm on my way to a rib roast soon. I saw 2 in the butcher case but didn't have the appropriate occasion. Too expensive for a random dinner. LolXL BGEJoe JRBaltimore, MD
