I put 4 racks on the large BGE yesterday around 11, cooked for 5.5 hours at 275 degrees. Bad Byron's butt rub and apple chunks were used. This was my first low n slow with ribs and I'm hooked! The flavor and tenderness was unbelievable.
Next up is brisket which I have never done before so any links to the best methods would be appreciated. Thanks!

Nice! Thanks for the pics.
I wasn't sure I could fit multiple full lengths BB racks on my large, now I know I can! Also good to see that the ends that were hanging over the edge of the place setter still look fine after a long cook.
Oh...and great table! I may have to move my egg off the nest some day on into a table. Such great work space and a good place for your cigar.
