I put 4 racks on the large BGE yesterday around 11, cooked for 5.5 hours at 275 degrees. Bad Byron's butt rub and apple chunks were used. This was my first low n slow with ribs and I'm hooked! The flavor and tenderness was unbelievable. Next up is brisket which I have never done before so any links to the best methods would be appreciated. Thanks!
