Ribeye, fingerling potatoes, and KANGAROO !(pic heavy)

Just gettin egg fired up. Bayou classic hardwood lump. Wanted to give it a try and for 6$ why not. Huge lump!
Fingerlings with some purple spuds. Family favorite. Garlic, salt pepper and EVOO
1.25" ribeye. Always cut fresh from the butcher.
Kangaroo tenderloin. Never had it but why not. Ill cook it the same as the ribeye?
Also made up some ABT's with fiery rub and some pepper jack. Good eats. Enjoy the day!

Well it was awesome! As tender as filet mignon. Taste was excellent. Reverse sear method. Used cast iron pan with bacon fat to sear. Temp was over shot to 140 (going for 135). Lived in Australia for a few years. Was told to go more rare than medium with roo. Gets tough the more done it gets.

I lived in a little town in the outback, Alice Springs. I wouldn't say it was on the menu everywhere, but you could certainly get it. The best dish I had it in was this German/Dutch restaurant that served it in a stroganoff dish with spatzel; stupid good.
As for hunting them, their guns laws are incredibly strict, after some incidents like what we have around here. But you can readily buy it as well, though most don't, except for the aboriginals from what I gathered.
But the roos themselves are all over. You can actually foster raise orphans that survive roadside collisions. They bond with anyone/thing instantly as they need that warmth and closeness.

Fun fact: Kangaroos don't fart. So they probably don't make good pets (AKA "scapegoats").
Absence of digestive methane release
Despite having herbivorous diets similar to ruminants such as cattle, which release large quantities of methane through exhaling and eructation (burping), kangaroos release virtually none. The hydrogen byproduct of fermentation is instead converted into acetate, which is then used to provide further energy. Scientists are interested in the possibility of transferring the bacteria responsible from kangaroos to cattle, since the greenhouse gas effect of methane is 23 times greater than that of carbon dioxide, per molecule.[34]

All good places to grab some grub. If you make it back, go to Keller's. That's the place that has the roo stroganoff.
I spent WAY too much time in the casino when I was there. But, I made a **** load of money taking duckets off Aussies that never learned to master Texas Hold'em.
If you haven't overnighted in Sydney on the way out yet, make sure you get over to the Rocks and grab a bit to eat down there. Too many good places to grab list down there.
