    The pie above was a wide open egg on steel, dome was north of 1000 and climbing, steel temp was 700 and climbing.  Total bake time was 4 minutes.  Setup was an inverted spider, 16" carbon steel wok filled with sand, standard grid, then 16" Baking Steel.

    I go 550*, plate setter legs down, grill extender, pizza stone, parchment paper under pie, about 10 minutes until done.
    I like my butt rubbed and my pork pulled.

    Thanks! My setup is plate setter legs down, four 1" spacers, pizza stone, dome 550, pizza on parchment just long enough for crust to crisp a little then pull parchment, cooks total about 8-10 minutes.
