Eggcellent breakfast this morning

On vacation this week helping SWMBO distract our 2 year old and take care of our new little boy, so took the opportunity to expand my egg skills. Saw this recipe on a forum post, gave it a shot, and turned out great! Even my most discerning critic couldn't get enough!

In cast iron skillet, line bottom with raw bacon, add diced onions, add hash browns, crack a few eggs (4 in my case) then scramble a couple of raw eggs and pour liquid on top. Shredded cheese on top, then in egg at 325 for about an hour. Tiny bit of apple wood for smoke, delicious result.

    Good idea flynnbob, it would have served 4 or 5 for a full breakfast. Also, it firmed up enough to let it cool, slide it out, and cut it up into smaller pieces kind of like a frittata if you needed to make it go further.

    @JWF I am going to try this.  Was the bacon thin sliced and did it make the cook greasy?  Maybe try ham on the bottom instead (maybe it would burn though). Was this direct or indirect?  I will post some pic's.  Thanks for sharing.

    @flynnbob‌, Bacon was normal thin, although thick cut may have worked better. Didn't make the end product too greasy....the potatoes will absorb a lot of that. The bacon was not very recognizable after that much time. I did direct heat, but next time will use the platesetter. Also might consider lining bottom of skillet with biscuits or flattened out Dixie rolls, but that might get burned up. Good luck, let me know how it turns out!

    No garlic. Coarse sea salt and fresh ground pepper on top, otherwise just the basic ingredients. Definitely has my mind wandering for other spins on the approach though!

    Thanks.  Bacon it is. I am thinking that I may try and make a crust out of a pie shell and cook it high in the dome indirect.  I will tinker with it and see what I can come up with.  I may try a small dry run before I go all in for the guests.

    Great idea... Might do this next time I have company staying the night at the house.

    I like crispy hashbrowns, so I'm thinking of hashbrowns on the bottom, pre-cook a little bacon and sausage and toss that in with some cheese and top with scrambled eggs and then cook the whole thing..

    Would be pretty easy and awesome! Cook the bacon in the cast iron skillet on the grill and mix up the whole thing in one pan.

    12 inch Lodge pre-seasoned skillet. just barely fits, have to skew to one side, but total width is right at 18 inches.

    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    :-bd Nice. I, too, need to step up my breakfast game. Just not a breakfast kinda person and when I do eat breakfast on the weekends, I don't usually feel like firing up the egg that early. Might have something to do with the night before. ;) I think I'd have to add some jalapenos of green chiles to mine.

    @Griffin Some kind of peppers would work really well. Here is mine when it came off:

    I think next time I'll skip putting the cracked eggs on top and just do all scrambled eggs. The yolks of the whole gets got too dry for our tastes.

    One other thing, which I think was a result of indirect, the bacon did not crisp up at all when the rest was finished at the 1 hour mark. I was able to pour some grease off into a drip pan, then put it back on direct for a few minutes, which crisped up the bacon nicely. So I think a combination of direct and indirect heat for portions of the cook would be best. I'm thinking even starting out on the stove would work to initially cook the bottom, then put it on indirect would work.

    This seems like a blank slate that is open to build to taste with. I will be doing this again, and trying different add-ins to see what we like best here.

    I have done this for years only with the bacon on top and biscuits on the bottom. Never in the egg though!!

    I concur.  Put the eggs on near the end of the cook.  I love runny yolks.  Doesn't get much better than that.
