Lechon Cebu (just the belly not whole)
Has anyone ever made a rolled Lechon Cebu stuffed with lemon grass and other items. I have been asked to go pick one up from the market fully prepared and I refused and said I can do it better. If someone has experience with what gets stuffed inside that would be great. I got some good ideas from Google one what to stuff inside but if anyone has done it before that would be great.

Even with the correct ingredients, you'll have a tough time getting the skin crispy like a true Lechon Sebu should be. The Big Green Egg is an amazing cooking vessel but it cannot replicate the open fire rotisserie needed to pull off a great Lechon.
