Turkey Meatballs,Sauce and Zucchini pasta

I made this OT because the egg was only used partially to make the meal. We've been on an eat healthier kick lately and kinda enjoying the converting of the convention cooking methods over to eggin. Started out with 2lbs of turkey cutlets that I ground and mixed with Italian breadcrumbs,parsley, parm cheese and a egg. Simple but tasty, I hoped. Cooked the meatballs indirect at 400 till they were 150 IT. image While this was goin on I made a marinara sauce inside on the Big Clock. Then I put the meatballs in the sauce to finish cooking image While all that was finishing up I shredded some zucchini and sautéed it This was surprisingly good. image And the ready to eat plated up pic image The taste on everything was very good. I should have drained the zucchini a bit more because it was just a bit runny as you can see in the last pic.

    That looks great. Can you give some more details on the zuke pasta? How does it taste and compare to real pasta? How do you cook it? My Doc mentioned to me that I should try it in place of pasta, even told me that he got some kind of veggie slicer on Amazon that will slice your veggies up pasta like, but I have not tried it yet. Kinda missing pasta right about now.

    @Griffin - the taste on the zuke pasta was a lot better than I expected. I like zucchini anyway but the texture was close to regular pasta and the taste didn't jump out as anything odd when eating on this dish. I just used the largest holes on a box grater to slice it this time but will be investing in a mandolin or some other form of slicer for the next time. There will be a next time. I found several different ways to cook it but I went with a quick sauté in a little EVOO and then in the same pan I added about 1/4 cup of water and steamed for about 5 min and drained like reg pasta.     Looks great . . I make the same kind of meal except I use spaghetti squash instead of zucchini.   Mine was watery as well, but tasty and healthy.

    @NDG - I have never eaten spaghetti squash. How was the texture?

    I wonder if the zucchini couldn't be cooked/smoked on the Egg, using either a wire basket or a perforated pan....?  That would give some extra smoke flavor, and keep it a bit drier.   :-?

    I was thinkin about that earlier as I was makin batch #2 for the leftover meatballs and sauce. I was actually thinking of using my wok and stir fry it. The other thought was to salt it for 30 to 45mins to pull the moisture out before cooking.
