Pizza Tip

Hi All,
Since I've been Egging many pizzas recently, I thought I'd pass on a reminder for great crusts. Immediately after removing pizza or bread from the Egg, put it on a rack, allowing air to circulate under the crust. If allowed to cool on a plate, the resulting moisture makes the crust soggy. I was just thinking that maybe some of you might not know that.[p]Cheers,
Gretl
