How much do you TRIM off a Packer

I've always felt like I am "Over" Trimming a packer, taking off too much of the fat.
Today I watched this video, and it looks exactly the same as how I do it. Check It Out.
How about yall? More or less?

I trim mine to between 1/4 to 1/8" overall and then really aggressive on trimming out the hard fat between the point and flat. Sometimes I'll save that fat and reduce it to make tallow.
