My first Spatchcock
So I purchased two cornish hens from Ingles for about 9 bucks and decided that was a decently low price to experiment with my first spatchcock. Cut the backbone out like instructed, seasoned with Dizzy Pig Mediterraneanish and let it cook. Took about an hour and 10 minutes to cook both chickens but was well worth it. My 2 year old daughter ate one chicken by herself and I had the other. If I didn't cut her off she'd have ate mine as well.

Haven't tried the mickeys coffee rub yet. I bought a bunch of the samplers to try out which ones I like the most. Have to try that one next. Bought a few pounds of drumsticks from my butcher so will get to it this weekend.

Mickey's Coffee Rub must be really expensive stuff. I haven't found it at any of my local stores.They/Them

I set it at about 400. Did direct with only the stainless steel grate.

Nicely done. My twins will be 3 next month. The girl will eat anything. We've got a lot of work to do with the boy. He's an eggo-terian. Only eats eggo blueberry waffles and the occasional banana.
