The twinned plates, facing, reminds me of an old lab trick. 

We used to use shallow porcelain dishes, but you can also, in a pinch, sharpen a knife by drawing it in the groove created by placing two ceramic glazed or porcelain plates face to face.  Or by drawing it in a shallow fashion along the rim of such a plate.  This is not a substitute for proper sharpening, but works in a relative emergency.
