How many hours per lb should I plan on a briscit ?

    Riding the conservative train I would plan on 2 hrs/#.  If you have a packer then you will likely get away with less time but each hunk of beef behaves as it wants.  You can always FTC (foil, towels,  cooler) if finished early.  And always slice against the grain and don't slice til ready to eat as it can "dry out before your eyes".  Enjoy the journey!

  • Pegging an exact time/lb is a fools game but, like @lousubcap said, you can plan on 2hrs/# as a general guide. What size brisket are you doing and it is a whole packer?

    Well, "spa-Peggy" is kind of like spaghetti. I'm not sure what Peggy does different, if anything. But it's the one dish she's kind of made her own.
