When ever I have any left over salmon such as last night when my wife couldn't eat all of hers - I'm glad! Why? I take the remainder breaking it up fine with a fork and mix it in a bowl with softened Philadelphia Cream Cheese and some freeze dried chives. Add a little paprika for zing and I have a tasty spread for crackers or bagels. Try it - I bet you'll like it! I've even egged salmon for the sole purpose of making this spread!

I am not familiar with the concept of "leftover salmon". Whatever gets cooked gets eaten. :) But it does sound good.

I hate it when I go to the kitchen for food and all I find are ingredients!

imageBTW it is better with at least roughly double the amount of cream cheese.

That looks like a great snack Ron, minus my nemesis....PAPRIKA.

Could sub in a chile to heat and flavor liking?  Ancho, Guajillo, Pasilla, Aleppo would be on the milder end; offering a fruity, smokey heat......much more than red chalk.

Love smoked fish spread.  Here is one variation I have been using for MANY years.

LOL - oh well, here's what it looks like mixed well. BTW here is another hint...check to see if you have any crackers in the cabinet besides saltines before you make it!

By the pic, I'd still eat, just don't tell me it's in there. ;)

Looking forward to Peoria.  May bring my son down, graze, and spectate for this one.  Still up in the air though.

Great! That is Sat, June7th this year. BTW your son might enjoy a trip to the Peoria Zoo. Surprising what $35 million can buy when thrown at a zoo in a town of 100K population!

Thanks for the suggestion.  We may have to fit that in.  Always stop in Kickapoo at the Jubilee and pick up a pie on the way home.
