Getting my pigs
Just got off the phone with my butcher. My pigs are being cut today. I usually get a pig from my neighbour each summer but this year I'm getting two. Cutting as follows:
Loin Chops - 1 inch minimum
Roasts - 3-4 lbs
2 hams cut into steaks, 2 hams frozen whole
4 butts for the Egg
Ribs etc
Pork Belly cut in 2 and froze for future bacon (8 pieces at about 5 lbs each total)
All trimmings frozen as they are in 5 lbs bags for sausages.
I'm excited and the hard part will be remembering to post pictures.

gmac, apparently, you NEED to call your butcher and tell him you want the heads too.
I hate it when I go to the kitchen for food and all I find are ingredients!

I just called my local butcher yesterday to order a hogs head and was told that he can not get them now because Quality Meat Packers shut down. He wasn't sure how this was going to affect his pork supply in general.[Edit]: Here is a more current article---------------------------------------------------------------------------------Well, "spa-Peggy" is kind of like spaghetti. Got my pigs. Worked out to about $2 per lb. Cant wait to try a butt on the egg. 4 bellies for bacon, jowls and hocks and chops...oh my!Mt Elgin Ontario - just a Large.
