    One thing I want to try, but haven't, is combining those two types of flour. I have used AP and 00 (and Bread for that matter), but have never combined. 

    As for shaping the dough, that's the only way I've ever done it.image

    I hate it when I go to the kitchen for food and all I find are ingredients!
