Fish taco question (crispy fish but no breading)

I love fish tacos but only if the fish is a bit crunchy or crispy.  I am cutting way down on carbs so I can't add any kind of breading or crumbs.  I've searched the forums and read several recipes but haven't found the key to get the fish a bit crispy/crunchy.

Any advice? I can't stand soft or mushy fish.
