Cushion Pork

Has anyone ever heard of cushion meat...I guess it's a cut similar to pork butt. A BBQ restaurant in CA metioned it to me...said it had less fat and cooked faster than a butt. Anyone ever try it or know where to get it? Thanks

    yes I have used cushion meat to make Tasso on the egg. Cushion meat is very lean, kinda like a pork loin. I use it often to cook what is called Marinated pork, served over rice. You can cook these similar to pork roasts but will end up being a little dryer in texture than pork butts, but a great little piece of meat.

    Dang Good,[p]Cushion meat is a boneless roast cut from the picnic end of a shoulder. It cooks a little faster because it is a tick leaner and there is no bone.[p]~thirdeye~

    Dang Good,
    they are usually Big Mans Fist size, and as for as prep, treat it like a porkloin, cook time depends how you cooking but i never tried using it for PP.
