    Slicing always go against the grain. Unless your trying to shred it. It is difficult to see if you cut against the grain. How was the bark? Moisture? Etc. Looks good.

    That was a bad pic..I sliced against the grain on most of it. Hard to tell which way it was going. Bark was really good, moist & flavorful.
