Mastered whole smoked chicken. My family can not get enough of this stuff!

    How did you like the flavor with the cherry wood (& did you spice your yard bird or just naked)? I've used apple wood and even a couple of pieces from a orange tree I pruned to remove frost damage and enjoyed both but, haven't tried cherry with poultry. And was cooking my chicken like your pics but, after 1 Spatchcock SWMBO loved it so Spatchcock it is ;-)

    I use cherry wood every once in while with poultry when I run out of apple wood. It's better than no wood, but cherry definitely taste better with red meat in my opinion. Either way I prefer using fruit wood or alder to flavor my food. Mesquite is too strong for me.

    Cherry is mild in moderation and does add some color.

    I like a little stronger smoke than this but it was still eatable! I made a rub for sugar, brown sugar, cumin, pepper, kosher salt, chili pepper, onion and garlic powder, cayenne, and dry mustard. Also, I stuffed half a stick of butter between the skin and the bird and a half an onion in the gut.

    Cherry is mild in moderation and does add some color.

    I liked the color on the yard bird! May try some on next Spatchcock I make to try it out.
