Not on egg OT

A friend lost her father on Wednesday. I made a scratch chicken curry for after the funeral tomorrow. Going to make a beef stew in the morning.

    Sorry to hear that. Looks good, you're a good man. Scratch means you roasted/ground individual spices/herbs? recipe please.  btw, we never make curry on egg.

    Sorry buddy, I made it up. I bought a bunch of chicken leg quarters, skinned and chopped. Marinated with lime, turmeric and red chili powder. Roasted the dry masala (bay leaf, black cardamom, green cardamom, cinnamon, clove, peppercorns and dry chili). Put that in the blender and fried mustard seed, cumin seed, coriander seed, garlic, ginger, onion, tomato and peppercorns. Added some water and ground the whole lot up. Then fried more onion, coriander powder, cumin powder, garam masala, tomatoes and shallots. Added the chicken and cooked for a while, added the ground masala and covered. Cooked for an hour or so, added more tomato, fried some more onion and coriander leaf. Pretty damn good for a whyte boy!

    Edit: a bunch of green and red chili in there as well. A bunch of red chili powder too.

    ya, whyte boy, but you apprentised at a restaurant kitchen in Brampton, no?  very impressive though, bet it taste good too, I got dizzy just reading the ingredients ;)  our go to lazy cooks commercial curry powder is from Malaysia.

    Slightly related, anyone ever tried to use the egg as a tandoor? I figured you could put in the platesetter and leave the DW off and get some mega-skewers for the chicken. Just wondering. If u were really adventurous you could stick some naan on the side and really go all out

    @xiphoid007 - now you've gone and done it :) the answer is a resounding yes! Search the forum for tandoor or tandoori chicken and you should find some helpful info. I'll try and post some links when I get home.
