I live in Winston-Salem and I give that "coarse chopped" my seal of approval. Looks really good. You can buy skin on picnics at Walmart. Give that a shot.

Where is you BBQ (red) slaw? Did you make the HP's too?

Oh and hush puppies were of the frozen variety, not bad. I do have a recipe but I have not tried it yet, I hate frying stuff because I always make a mess.
