Candied Jalapenos

Did some candied jalapenos yesterday. I've never done them before so I just used 1 1/2# of peppers; which yielded two 1 pint jars. I'll try these is a few weeks; hoping they turn out!

Well, "spa-Peggy" is kind of like spaghetti. I'm not sure what Peggy does different, if anything. But it's the one dish she's kind of made her own.

I make a similar version of these but I use the packs of Mrs wages bread and butter pickle mix. Just sterilize jars and lids, pack with peppers and pour the brine over them. I boil mine in water bath about 7 minutes. I did 2 dozen jars last summer and only have a few left.

Just opened a jar Tues. night... they were pretty good. They have a little more bite than I had expected. I think that the next time I do them I might try removing the seeds and membrane from half the peppers. Made 1/4 recipe last night. Couldn't wait and tried some in a Vietnamese sub today, syrup was good and not too spicy.canuckland

Mmmmm, Cowboy Candy! Tried this myself last Fall with Jalapeños that we grew in the garden. I eat them with some softened cream cheese on Ritz. Good stuff. Can't take them straight up though!
