In Vietnam this family purchased a live hog and then butchered it on their doorstep. You can see them shaving it with razor blades to remove the hair. It also appears that some of the ribs were removed, perhaps to help it lay flat. It was later taken to be barbecued and then sold in smaller portions to the community. The hog head photo was taken at a nearby open-air market. Photos 2012

    My parents grew up in rural China, they used to tell us stories of how their parents would raise a pig or two, then 'harvest' and sell them at local market to raise fund for special occasions.

    Brothers in laws do this is southern California. Cubans that raise pigs, keep one for themselves for a Christmas feast and sell the rest .
    The day before its a knife to the heart of the pigs, its grueling day I hear for the 4-5 guys participating in the killing of several pigs.

    I've eaten this feast the past 4 years or so.

    It is a very interesting culture. I really enjoy our visits to Vietnam where my wife's family lives. And...the food ain't that bad either.  :)
