we were watching paula dean yesterday, and she was doing up a vidalia onion on the grill . .. .looked good, so i tried it last night, and WOW, was it ever delicious. .. [p]take a vidalia onion, cut the top and bottome off, peel it, quarter it (but not all the way through so it stays in one piece).. .take one beef bullion cube and stick down in the center of the onion. . .put a big pad of butter on top of the onion. ..wrap it in aluminum foil (i left it a little loose on top so it would get a little smoke). ..i was roasting a couple of beer butt chickens at 350 degrees on the grid over inverted plate setter, so i just put the onion right there with the chickens for about 1 hour). ...[p]OMG, it was good. ..tender as could be and sweet as candy with a nice little 'beefy' taste from the bullion cube. . . .i'll be doing this one the rest of vidalia onion season . .. .

thanks. .. there are some great recipes there!! . . .i guess a lot of folks have that same basic recipe for baking one. ...i was looking at their vidalion onion pie recipe, and i bet it would be better, instead of sauteing the onin in butter on the stove, go ahead and do it in the egg first, then use it for the pie. ..bet that would really be outstanding!! . .

could be - however the next time I make the pie version I'm planning to substitute French onion dip for the sour cream. I found the pie was very tasty with the sauted onions, albeit a tad tart.

The technique has been around 'forever' - well at least since 1996 when I started reading the old BBQ list.[p]Try some adding some balsamic vinegar also.[p]Toy Man

gotcha. . .i know the basic recipe had been around a long time. ..first time i'd heard of adding the bullion cube. . .i'll give the vinager a try next time as well (do you add that as well as the bullion and butter?) ....[p]thx[p]max

Yep - add it all in. I usually tend to leave the Balsamic out anymore but it is a different taste and quite a few people like it.[p]Toy Man

I usually add some S&P and red wine to the butter and boullion cube. Melts in your mouth and you really can't over cook them. they just get softer & sweeter!

I just did one last night for the first time. I cooked it for 1 hour @ 350, it could have gone longer. Next time it will be 1.5 hours. Your suggestion to add red wine has been noted and it will be added next time.
