Direct or Indirect Heat for My Ribs?

Unknown
edited November -0001 in EggHead Forum
Curious as to whether you favor direct or indirect heat for ribs. Seems like most here prefer direct.[p]FYI, I do not favor the "fall-off-the-bone" type of rib, if that factors into this discussion.[p]Thanks in advance for your input -- happy Memorial Day!

  • Bulldog Bob,
I go indirect in a rib rack sitting on the grill, with just a piece of foil covering about half the exposed grilling area. Rub them down with whatever; make sure to pull the membrane off the backside of the ribs first. Slather some sauce on 15 minutes before finished & they will be perfect. Takes me about 1.5-2 hours for room temp ribs going on at around 200-220 dome temp. Don't overcook. They will be perfect at 140. Happy holiday!

  • Martini Mark in MSP,
Don't forget some apple wood chunks or chips....that will sweeten them even more.

Bulldog Bob,[p]The 3-1-1 method uses both. 3 hours indirect, 1 in foil and 1 direct. [p]The foil will give the fall off the bone texture. You may try skipping that and adding a little more time to both the indirect and direct parts of the cook.[p]Smokey

Bulldog Bob,
For pork ribs I like the raised grid, direct method that Woodoggies uses. 230 degrees, flipping and basting every 30 minutes for about 4 hours. It is proven very good to me. [p]These were the ones my son Ryan did last week for his first cook.

Bulldog Bob,
I vote for indirect, sans foil. 5-8 hours in the 225 range. Tender, one-bite-at-a-time ribs. Here is Hatch cutting up the ones I cooked up yesterday. They wuz goood. [p]As you can tell, folks have their favorite ways, and there are many routes to rib nirvana. Happy cookin!

  • Nature Boy,
LOL. . .i'm just impressed that someone would spend a million bucks to live next door to you!! .. heee. .. . but then, once they smell the smoke from all those eggs, i'll bet they get really friendly, really fast!!! . .. you just need to make sure to tell them to keep the booze hidden (from your other neighbor that is) ...
