Did two pizzas tonight, one was a converted salad my wife makes with pear, shallots, red onion, candied walnuts, and a dressing with apple cider vinegar and dry mustard. The other was a family standard fresh tomato, basil, red onion, black olive, and garlic olive oil. The egg performed perfectly. I cooked the pizzas between 550 and 600. Got there quickly and held temp with no trouble. Here are some pics, and the recipe for the pear pizza, It is really very good.

Great looking pies The pear salad pizza looks really interesting. No sauce on that one?Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

Smokey Pit,I converted one of my wife's salad recipes into a pizza. On that pear pizza I use the dressing to paint the dough as I make the pizza. The dressing is made with apple cider vinegar, honey, olive oil, dry stone ground mustard, and minced shallots. After i put the baby arugula on, I also drizzle a little dressing on top of the lettuce before I add the mozzarella, goat cheese, and prosciutto. The result is a really nice light but very flavorful pizza. Give it a try, I think you will like it.
