    Sounds good to me. How good is your sauce?[p]Here it goes:
    1 med onion, finely chopped or shredded
    2 pounds of ground lamb
    1 tablespoon of finely minced garlic
    1 tablespoon of dried marjoram
    1 tablespoon dried ground rosemary
    2 teaspoons of kosher salt
    1/2 teaspoon of ground black pepper[p]There was a suggestion from another to add some oregano and I think that would be a good idea.[p]Process onion in a food processor. I had to add water to make it really pulpy. Then wrap in a cheesecloth and strain. Discard juice[p]Mix onion with all ingrediants till it is a fine paste. Use food processor or mixer.[p]Form the mixture in a loaf shape and wrap in cellophane tightly, make sure there are no air bubbles. Let it sit in fridge from 2 hours to overnight. I used this time to make my tzatziki sauce, hummus, and marinade my onions and tomatoes in vinegar and organo. Marinading your onions and tomatoes makes all the difference in the world![p]Remove from wrap and roll into a cylinderical shape and wrap in foil. Grill high (around 400) for an hour, then remove foil to brown outter layer.[p]I placed a skewer in the middle so when we carved the meat off, I could hold onto something.[p]I would also recommend brushing the pita bread with olive oil and pan frying like a grilled cheese sandwich. [p]Serve with onions, tomatoes, feta, tzatziki sauce[p]These were really good and tasty. Let me know if you need a Tzatziki sauce recipe, I have a good one. Also made homemade hummus.

    She says...
    "Guava BBQ Sauce[p]3 celery tops finely chopped
    1 ½ onion finely chopped
    1 BIG bottle Bullseye BBQ sauce (ok we cheated a little)
    10 to 12 cloves garlic crushed and finely chopped
    1 ½ tsp chili powder
    ½ tsp summer savory
    ½ tsp pepper
    1 ½ Dry mustard
    dash of cinnamon
    dash of ginger
    juice from 1 one lemon
    ½ cup Guava jelly
    (If you can’t get Guava Jelly use Passion fruit Jelly or honey. But the flavor will not be the same.)
    Slather sauce on smoked pork ribs while searing on a hot grill for a few minutes
    Have some wet hand towels ready to wipe your hands. This is the best finger lickin’ rib sauce!!!!! "[p]I could use the Tzatziki sauce too. That's the bomb! [p]Aloha and thank you![p]

    guava wood,[p]Looks good. Will try it next rib cook.[p]Tzatziki sauce[p]16 ounces of plain yogurt
    1 med cucumber peeled, seeded and finely minced
    4 cloves of garlic, finely minced
    1 tablespoon of olive oil
    2 teaspoons of red wine vinegar
    5 to 6 mint leaves finely minced[p]After you mince the cucumber, strain it through the cheesecloth and discard juice. Mix all ingrediants together.[p]I halfed this recipe and made more than enough. [p]

    guava wood,[p]Wardster said I should have negotiated for some of that guava wood. He says it is the best for smokin'! Oh well, next time.
