So we don't have to say what we are doing first then? I would hate to see 45 people all making ABTs. I'm gonna do my Rob Ford Fiesta Platter in honour of it being in Toronto. Basically just a big lump of lard, soaked in bourbon, and liberally smoked with crack.

    Not with that guy !!

as far as telling them what you have to cook , It is my understanding that you get to do what you want when you want .

I am  looking at it as a fun day to cook for some new friends , talk egg talk  and also show off my chops

I will look into the Buffalo flights.

@gmac Think about items you can prep at the house. Then cook at the fest.

We pre-made enough chorizo slider patties to serve over 100 (54 cut in half, cooked 12-24 at a time, 18 min a cook). This was my first!

I grilled Pineapple spears then cut into bites and then glazed in a sauce pan.

Think simple and think prep at home.

    You will do fine.

Crap. I don't know if I can convince the wife to drive 7 1/2 hours to TO vs 45 minutes to DizzyFest. Maybe an ice wine tour thrown in...

I think I know what I will do and yes, home prep will be key and pretty much minimal refrigeration to allow for more beer to be smuggled in (its hard to fit a keg in your pocket). Is there some sort of after party because I would happily bring 5 gals of one of my gold medal winning beers (seriously but it won't be Bud Light...).

You'll need to hang around for 5 or so months for ice wine tours. You can, however, do the edge walk in June.

Well, "spa-Peggy" is kind of like spaghetti. I'm not sure what Peggy does different, if anything. But it's the one dish she's kind of made her own.

Don't get caught up prepping at the fest. You'll miss a lot and work yourself to death. Plan ahead and have fun. After party?

So I've been laying awake at night wondering what I've gotten myself into. What sort of stuff gets cooked at these things? I'm guessing low and slow is out. I saw some salado recipes and now I'm scared.

I was up all night 2 nights ago when I signed up with the same worries.
But then I remembered that I am a pretty ok cook and the egg has never let me down .

I just came back from lunch with @littlesteven and although there was not much talking with the large amount of delicious Indian food in front of us . He definitely put my mind at ease .

Dude, still feel like I'm dozing off. Veg Thali = bad idea. Too many carbs. We should have had the quail, goat curry and lamb roll
