Big Ragu ribs with new modification to recipe working really well

I got a lot of criticism for foiling my ribs when I posted this recipe. Bookmark Big Ragu's Last Baby Back Rib Recipe You Will Ever Need I know that the rib consistency is really a matter of personal preference. I have slow smoked with no foiling and the ribs are still tender but still have a pull that I do not prefer. I am now using a 2-1-1 rather than a 2-2-1. The additional hour in the foil was not necessary to give a tender result. I have also started to place the ribs bones down on a foil bed before the juice and wrap. This keeps them elevated from the nectar which leaves the bark dry and intact for the final hour unwrapped. Here are some pics from this Sundays rib cook.
