Cryovac'd brisket got a hole in the package

I have a 15lb prime packer that I took out of the freezer and put in the fridge five days ago to thaw. I have been gone on a 3-day work trip and it was still quite frozen when I left.  Last night when I got home, brisket was thawed out but apparently the cryovac got a small tear in it while in the freezer.

Now that there is air in there and it's thawed, will it keep until this Saturday? The plan was to start the smoke on Saturday morning and have it for Sunday afternoon lunch for my son's baptism. I don't want to make anyone sick.

You can try to "dry age" it but you will lose more moisture than fresh beef. In terms of safety, you can swing it but you are messing with throwing a lot of money down the drain if it starts to rot, or worse, builds up toxins to sicken someone.

    Personally, I'd cook it now.

I would take it out of the cryovac and rinse it I cold water. Then put it back in the fridge on a rack till you are ready to cook.

I guess that makes sense. Would you re-wrap it in plastic after the rinse?

I wouldn't, this would be the dry age part I mentioned.

That's kinda weird...I thought Little Steven would be the one looked over when speaking.  How tall are you?
