Any ever tried/cooked Plantains??

Smokey,[p]The taste and texture is somewhere between a banana and sweet potato. The few times I've prepared them I have started with yellow (ripe) or a bit overripe (brown to almost black) then peeled and sliced on the diagonal about 1/2" thick. Then fry in neutral oil (peanut is good to) over medium heat until the soften, turn bright yellow and start to develop a light crust from the natural sugars. Squash with a spatula until about 1/4" thick and fry a bit more until the crust devlops a second time. They are SOOO good![p]And if you like exotics like plantain, you might also try roasted breadfruit (serve with melted butter on the side for dipping). The EGG would probably make an outstanding platform for slow roasting breadfruit. I like breadfriut MUCH more then potato (healthier too), and I'll bet it would be great as a side with roast pork.

WPB,[p]I may try to slice them as you suggested and then grill them (on each side add a bit of salt and some dizzy pig rub).[p]I've seen several recipes for fried plantains, and have had potato like chips (salted).[p]I'll report any success or failure![p]Smokey

Smokey, I wait until the peel is dark brown or almost black, then peel, slice into 3 or so long strips, and saute in butter or you can use low fat oleo, and as they turn yellow in the skillet, add lots of cinnamon and brown sugar. Yummy!
