We do the often here. I rub with olive oil, then add spices and let rest over night in thr fridge. Then smoke indirect for 3-4 hours with wood of choice![p]Mmmmm!!!!

Looks great! I have a rub recipe from the Big Green Egg Cookbook I like. That should do just fine. WooHoo!

Larry Gianneschi,[p]Some people put the rub and or butter under the skin. I'm sure it would add to the flavor, but it can be a pain to do![p]

I like cooking them and stuffed bellpeppers, here i used a rice dressing to stuff the peppers.

Looks good, how did you spice/marinade the turkey? And, do you cook the peppers for the same amount of time as the turkey?

I injected it and the peppers went on the last 45 minutes of the cook, dressing is already cooked and i like a little texture on the peppers so it doesnt take long.
