CB,[p]I love the bark, usually howl for more! Hehehehee, actually the bark is the crust formed from the rub and the fats that cook out of the butt. The cut of pork you are talking about is a picnic, which is the portion of the shoulder closer to the hoof and has a layer of skin still on. You can peel it off before cooking or score it 1/4" deep. The upper portion of the shoulder does not have the skin and has a smaller bone. [p]~thirdeye~

CB,[p]I prefer to remove the skin from my picnics, but leave a nice fat cap on. Just slice a straight line from the wide end to the skinny end on the side where the skin is smallest, and peel the skin off. It's kinda fun to do,[p]Clausen
