Sour Cream Chicken Enchiladas

I usually make a Spatchcock chicken once a week and I am always looking for something else to make with the left over chicken. The wife wanted enchiladas this week so I agreed. I made a green tomatillo sauce this morning, and pulled all the meat of the bones. Mixed the chicken with sour cream and some roasted hatch Chili's as well.

6 tomatillos (boil them) 
1 yellow onion
 Bushel Cilantro 
1 jalapeño 
1 red tomato 
 Food processed everything and put it in the fridge till cook time.

Cooked indirect 350 for about 40min then applied cheese and cooked for another 10. They came out outstanding only thing is next time I will use corn tortillas. All I had was flour and I was content staying home and enjoying the back yard since it was a gorgeous day out. imageimageimage
