Blackened Chicken

Boned, skinned, and tenderized some Smart Chicken thighs, in honor of my sample of Dizzy Pig Bayouish  Blackened in cast iron and finished in the oven, with saffron rice.... 


Bayouish is good stuff! Savory, a bit of heat, and stands up to high heat blackening. Thanks, Dizzy Pig folks!
