Wings and Spatchcock

I was planning on having just a wing night last night but one of my buddies informed me that he hasn't had one of my "special chickens" yet. So after work yesterday I went to the store and picked up a chicken and some potatoes. I injected the chicken with a lemon/lime and basil sauce that I made and covered it with a coating of Raging River. I cut up some baby reds and some baby yukon golds and put them in the DO with an onion, spices and some butter and oil. When I went to get the wings the other night they were out so I had to settle for just the drummies, I wasn't to happy but they actually turned out great. The drummies marinated in bourbon for a couple of hours then were hit with some swamp venom and some secret hot sauce from the U.P. The 6lbs of drummies went on the large and the potatoes and the spatch went on the medium. I finally got to use my thermapen for the first time and absolutely loved it, not sure how I ever cooked without it! Everything turned out great and everyone loved the meal. My buddy was raving about his first spatch and said chicken will never be the same again haha. I forgot to take a picture of the chicken but I know my wife and one of my buddies did so I will get a pic of that up later.

Those wings look and sound amazing! And you are correct about the thermapen. Never knew what I was missing before having one. Hands down my favorite accessory.

Never thought about marinating wings in bourbon before. Great idea. Did you add anything, or was it just straight bourbon?Large and Small BGECentral, IL

@saluki2007 It was straight bourbon with a heavy coating a swamp venom rub. I have been doing it for a little while now and everyone love it. I started doing it because I was drinking one night and decided it would be good. Turns out not all of my drunken ideas are bad haha. I put the wings in a bowl and pour in the bourbon. Normally I try and stab the wings with a fork or something to help get the bourbon in the meat. The longer you let it soak the better the taste, I think I have left it in the bourbon for about 8 hours before and they were excellent. It isn't an over powering flavor but is definitely noticable.

@GATABITES yeah we have quite a bit of snow on the ground here as well. Luckily for me the egg is right out the back door so I don't have much to shovel to keep it clear.
