  • Thanks for the explanation.  Have you experienced any issues with using ground beef with such a high fat content?  I would have thought you may have more go rancid over time than using a leaner meat.  Of course....if it is like my house...it lasts 3-5 days max and I refrigerate anyways.

    btw...I have the same gun and utilize the same seasonings as you.  Pretty darn good stuff.

    I think because its kind of like art.  It's fun.  Ultimately, they are very easy to handle.  It gives them that snap.

    I'm pretty new at making the sticks.  They are so good so they are gone really fast.  Remember I am using a jerky cure.  Which I think lengthens the shelf time and allows you to cook it at low temp and long times without becoming rancid.  I'm working on the road and today is day 5.  I'll let you know if the jerky makes me sick.

    No one will ever state on the cure packaging ( that I have seen) the expected dates until it goes bad. That could be a lawsuit waiting to happen. I have read and tested, I have been safe with on the counter for 1 week, and in the fridge for over a month. I usually freeze and just pull when I hae a hankering. They thaw out quite quickly if packaged flat.
