New Large Egg

Ok my new large egg nest will be here tonight at 9:30 central. Going to assemble tonight. I have some beef spare ribs to attemp on my first cook. Problem is I have to work and expect them to take about 5 hours. Can I start them around 2 Wedn. Or Thu. And leave it unattended until I get home around 5? Think I'll have too much trouble stabalizing temp?

What temp are you planning to cook at? below 250 without a controller is difficult! 250 275 seems to be the egg's good spot! Good Luck!

I was planning to target 250. I guess I can adjust depending on where I'm able to stabalize. Going to probably cook something simple tomorrow like burgers or steak and play with slowly stabalizing and bringing temp up and cooking around 350.
